Sunny Soup

Sunny soup for cloudy days.

Ingredients

  • 2 Tbs avocado oil (or ghee or coconut oil)
  •  1 medium onion diced
  •  2 medium carrots diced
  •  1 tsp Truly Turmeric
  •  ½ Tbs curry powder
  •  ½ Tbs garlic powder
  •  1 bay leaf
  •  1 & ½ cups washed Sunny Soup Mix (optional: soak for 4-8 hours)
  •  3 bottles of Broya Bone Broth (or 1 bottle AND 2 & ½ cups water)
  •  Fresh squeezed juice of half a lemon
  •  Pinch of Himalyan Salt or 1 tsp Coconut Sauce

Process

Place oil in a pot and heat on high. Once oil is heated add onion, carrot, turmeric, curry and garlic powder and bay leaf.  Stir continuously until everything is translucent, at least 5 minutes.  Add the washed/soak Sunny Soup Mix and stir, coating with oil and spices for 1 minute.  Add your Bone Broth and water, your lemon juice and salt or coconut sauce.  Bring to a boil on high heat.  Once boiling, bring down to a low simmer and place lid on.  Cook for 45 minutes, stirring occasionally.  Adjust seasoning to taste.

This soup is perfect to warm and fill you up, as temperatures drop. High in protein, fiber, iron and magnesium.
